The trains and buses from Dublin to Cork do not stop in Kilkenny, so you’ll have to make a few separate journeys:
Dublin-Kilkenny (train or bus)
Kilkenny-Foulksrath (bus or taxi)
Kilkenny-Cork (bus)
Also, since the castle is actually a hostel, I’m not sure it’s open to visitors as a tourist attraction. Maybe you could consider staying there for a night? You could spend the day in Kilkenny itself and visit Kilkenny castle.
