i would choose either prague or athens.
Prague = i’ve been there, and it is simply beautiful!! also its kinda cheap to eat and buy cristal.
Athens = i’ve never been there, but i really want to see the architecture of the greeks.
i wouldnt recommend dublin, because there is not much to see, expensive. but if you want to go to an authentic irish pub.. then…..dublin it is.

Amsterdam. It’s wonderful and has many tourist attractions. Barcelona is perfect if you have a couple of spare days…to visit one of the tiniest countries in the world- Andorra.

I would also chose Prague as a place as its so pretty and cheaper than the others. The streets are just lovely and multi coloured (lots of yellows, oranges ) and the spires of the churches etc are so different to those seen in the other cities you are travelling to…..
I was personally diappointed with Amsterdam (maybe because people talked it up so much I was expecting more).
Dublin is nice, but not fabulous
Barcelona is also nice (and the Gaudi arctichture is great!)
I haven;t been to Edinborugh or Athens

I will say that the countries you are already planning to visit are just unbelievable (never been to Paris but will be this summer).
As far as another city goes, Dublin and Edinborough should come off the list right away. Ireland and Scotland are great but don’t offer cities with the quality of a Prague, Athens or Amsterdam. Barcelona was nice too but again, it isn’t Prague, Athens or Amsterdam.
It has to come down to those 3 cities and you just can’t go wrong with any of them. All 3 cities are so rich in history and culture. If I had to rank them for you, (assuming you have never been) I would put Athens at #1, Amsterdam at #2 with Prague right behind.

I have to pick on not on the list but very close to Amsterdam…Rotterdam. It is a beutiful city that has some amazing building, most of which were built after WWII and are very um…art deco for a lack of a better word. The building light up and show people dancing across them. There is a bridge that kinda looks like a person holding the wires. It is very intersting ad the people are nice. It is also the largest port city in the world on the Maas River.

Belgrade. It is cheap and Belgrade have the best night life in Europe.
